What is semolina?

That's a good question! First, the spelt grains are ground very finely. Through this grinding process, the grains break down into flour, semolina and husk parts. The semolina grains are basically the starch particles of the grain! Since we at KoRo do not husk the spelt after harvesting, but grind the whole grain, we call our semolina wholemeal spelt semolina.

Throwback to childhood: spelt semolina porridge

Does semolina porridge immediately take you back to childhood? Fair enough — no one can resist the incredible taste and the good feelings that come with it. Best of all, semolina porridge is incredibly easy to prepare: bring 1 litre of milk (or plant-based alternative of your preference), 3 tbsps sugar, some vanilla sugar as well as a pinch of salt to a boil, then let 100 g of semolina trickle in and let cook. Then stir, stir, stir, to avoid lumps. As soon as the mixture comes to a boil, take it off the heat and let rest for a moment. The porridge is ready. If you want to add grandma's touch, mix an egg yolk with some butter and add to the mix, then fold in the beaten egg whites — et voilá. Now you just need the right toppings! Our all time favourites: sour cherries, applesauce, cinnamon and sugar or some raisins and nuts. But you don't have to stick to the classic semolina porridge: try making a macadamia vanilla semolina porridge or a chocolaty semolina porridge!

Noch im Mittelalter war Dinkel eine der Hauptzutaten für Brot. Dann ist es lange still um das Getreide geworden, weil es im Gegensatz zu Weizen nicht auf Düngerzugabe reagiert und somit als weniger ertragreich galt. Aktuell erlebt das Getreide aber ein echtes Comeback, in immer mehr europäischen Ländern wird wieder mehr Dinkel angebaut. Das liegt auch daran, dass Gerstenkörner von sog. Spelzen umgeben sind. Die dünnen Schalen schützen das Korn und halten Schädlinge und Krankheiten ab, deshalb müssen in der Regel auch weniger Pestizide eingesetzt werden.

Der Dinkel kann Hektik überhaupt nicht ausstehen. Deswegen ist es bei der Ernte wichtig, dass das Dreschen mit dem Mähdrescher langsam passiert. Das geschieht meistens zwischen Ende Juli und Ende August.

Caution for the French type flour and not semolina to make a kind of couscous.

I'm not judging the product, which must be of very good quality, but I'm just giving an opinion because in France Semoule is often used to make couscous-type semolina. I bought it to make couscous but I'm going to use it to make my bread for example.
