The time consuming pine nut harvest

Pine nuts are not actually nuts, but seeds - just like our sunflower seeds and pumpkin seeds. The pine cones are collected from pine trees in elaborate manual work. After harvesting, they are then heated in the oven to release their delicious seeds. By the way, this process takes place the very same way in nature, on very warm days when the sun's rays affect the cones. After removing the shell, the pine nuts are cleaned and then dried. With a bit of luck, they will end up in our nut wonderland and soon in your kitchen!

Using pine nuts for cooking and baking

Mild, sweet, buttery, aromatic - pine nuts have a wonderful taste that goes well with both sweet pastries and savoury dishes. You can add them to your vegetable lunch bowl, roast them in a pan and sprinkle them over your salad or make homemade pesto. They also go well in stews, soups or raw, in your muesli. Pine nuts or cedar nuts?

If you take a closer look, our organic pine nuts are actually organic cedar nuts. What does that mean? Don't worry, the two species are actually very closely related and have a very similar flavour. The confusion in the terminology stems from the fact that the term "pine nuts" has become widely used in international trade. This is because there are over 100 varieties of the pine tree genus worldwide, while the cedar tree genus only includes three varieties. The genus of our cedar nuts is called pinus siberica and can also be legally referred to as pine nuts. Unlike the famous pinus pinea, it does not originate from the Mediterranean region. But none if this is important when you consider what matters: in terms of flavour, the cedar nut is in no way inferior to other pine nuts and is even more aromatic and intense. So you are definitely making the right choice with our organic cedar nuts!

Pinienkerne-Gradings-Master-File

Pinus armandii

This oval type of pine nuts has a golden coloration which turns into brown towards the tips. These pine nuts have a sweet and buttery taste with a gentle ligneous note, and are normally 7-11 mm long.

Exact figures on pine nut production are not known; this is probably due to the fact that pine nuts are mainly harvested from wild-growing trees, and pine plantations are quite rare. Our world map displays an estimate. The pine trees only bear cones after about 20 years, and those are harvested between October and April. Harvesting the pines is quite complex, as the cones of the trees, which can be up to 30 meters high, are cut from the tree in dangerous manual labour. This laborious harvest results in a high price.
