Hazelnuts, walnuts, macadamia nuts – you probably already know all these types of nuts. But have you ever heard of tiger nuts? No? Then pay attention, because these pea-sized, brown nodules have a lot to offer! In Africa, where tiger nuts originated, they have been used for centuries as a popular food and remedy. In Egypt and the Middle East, too, they have long been said to have a healing effect. In the meantime, however, the "nuts" have also arrived in Europe and are known here under various names. Perhaps the name tiger nut means something to you. The small nodule is called tiger nut because of its special appearance: the tiger nut is striped like a tiger!

A nut for people allergic to nuts?!

You may be asking yourself why we've put “nuts” in in inverted commas? Just like almonds, cashews and Brazil nuts, tiger nuts are not really nuts, since they do not fall from the tree in their shells. In fact, the tiger nut plant is a sour grass that looks like ordinary grass and on whose roots pea-sized, brown nodules form - the tiger nuts. This gives them a decisive advantage, especially for those of us who suffer from allergies: even if you have a nut allergy, you can eat our tiger nuts without hesitation and use them in cooking and baking. 

Using shaved tiger nuts

The tiger nut is hardly edible raw, as it is very difficult to chew. That is why they are usually processed. In Spain, it is traditionally the main ingredient of the national drink Horchata de Chufa - a refreshing, vegetable tiger nut milk. We offer tiger nuts in dried and flaked form. Due to their light, natural sweetness, they are perfect as an ingredient in a granola, as a nut alternative in your home-mixed muesli or to bake an almond and cherry cake. But the nut can be used for more than as a nut and cereal substitute in your baked goods. Erdmandeln aus Niger:

Erdmandeln werden auch “Tigernüsse” oder “Chufas” genannt. Bereits im alten Ägypten wurden sie als Nahrungspflanze kultiviert. Sie gehören zur Gattung der Zypergräser, haben also entgegen ihres Namens nichts mit Mandeln oder Erdnüssen zu tun. Heute werden die Knollen sowohl im Mittelmeerraum, als auch in Ostindien und Brasilien angebaut. Ursprünglich kommen sie aber vermutlich aus Afrika. Hier sind auch unsere Erdmandeln beheimatet. In Niger ist fleißiges Wachsen angesagt!

Die Erdmandel-Ernte

Erdmandeln wachsen am liebsten in sandigem Boden. Zwischen April und Mai wird die Pflanze eingesetzt, bis September darf sie dann groß werden. Danach ist Trocknungszeit! Bis November oder Dezember trocknen die Erdmandeln unter der Erde auf den Feldern, bevor sie bis März des folgenden Jahres mit einer Erntemaschine geerntet werden.

Jetzt wird getrocknet!

Bis die Erdmandel so aussieht, wie auf diesem Bild, dauert es eine ganze Weile: Nach der Ernte wird das oberirdische Blattwerk maschinell entfernt. Danach wird die Erde abgesiebt und die übrig gebliebenen Knollen werden gewaschen. Jetzt wird wieder getrocknet, diesmal aber in einer großen Halle und für drei Monate. Die Erdmandeln werden regelmäßig gewendet, damit sie schön gleichmäßig trocknen. Nach dieser Beauty-Prozedur sind sie nun endlich verzehrfertig!

Great snack

Crispy roasted, seasoned just right and not too salty. Much better than some greasy, deep-fried bagged stuff. My husband doesn't really want to share them with our son, they're that good!

A miracle product, the tiger nut

A chance discovery. Super quality. Can also be finely chopped or pulverized into "flour". Enrich our muesli etc. in terms of taste and with valuable nutrients, fibre and vital substances as well as good fatty acids.

buntings excellent too bad no one knows them!
