Quinoa - what is it?
Like amaranth, this ancient crop belongs to the foxtail family and has been cultivated in the highlands of the Andes for more than 5,000 years, where it is considered a staple food. After their arrival, the Spanish colonialists regarded the so-called South American "Inca wheat" primarily as food for the lower classes, which is why it was virtually unknown in Europe until a few decades ago. Luckily, these times are over, and the hype around quinoa has become enormous, and for a good reason! Quinoa is not only a great energy supplier with a mild-nutty taste. It has many other advantages: quinoa is a pseudo-cereal (quinoa is actually a seed), making it gluten-free. This makes it a great side dish alternative to bulgur or couscous.
Cooking quinoa: preparation and recipes
Have you had enough of rice and potatoes? Quinoa is a great alternative for all types of savoury, but also sweet dishes. You can integrate it into any meal of the day, for example: enjoy some puffed quinoa with fruit, nuts and some agave syrup in your breakfast muesli. At lunch, make a quinoa bowl with smoked tofu from our Food Journal, and in the evening, serve it alongside a burger or fill a roasted pepper with quinoa and vegetables! Preparing quinoa could not be easier:
- Rinse thoroughly in a colander.
- Bring quinoa to a boil with double the amount of water and a pinch of salt, then reduce heat to medium and let cook for about 15 minutes.
- Done! When the water has evaporated (the quinoa should have some bite to it), you can serve the pseudo-cereal. Bon appétit!

Quinoa - the return of the Inca grain
Quinoa has been known as a cultivated plant for 6000 years and yet it has only really arrived in Central Europe in recent years. The goosefoot plant, which originates from South America, is experiencing a real boom - and rightly so.
Varieties & origins
White quinoa
Nowadays, white quinoa is the most common variety. Thanks to its gentle nutty taste, this grain can be combined with both savoury and sweet dishes.
In 2018, more than 250,000 tons of quinoa were produced worldwide, and the market for quinoa is constantly growing. 95% of global production comes from Bolivia, Peru and Ecuador. The quinoa grain originates from the Andes, and it was a staple food of the Incas. Quinoa belongs to the Amaranthaceae family and is therefore gluten-free. Moreover, this pseudo grain is rich in protein, as well as unsaturated fatty acids and minerals.
