Origin of green edamame beans
Edamame (pronounced ee·da·maa·me) are green soya beans, picked when still under ripe. They have a light nutty and mildly sweet flavour. The plant is originally from Japan. It takes about 2-3 months before the little green peas are harvested. Edamame roughly translates to "bean on the stalk" and they are also called "lucky beans". Our organic edamame beans are processed 6 hours after being harvested at the latest, meaning they are extremely fresh. We simply add water and Italian sea salt, foregoing any additives or artificial aromas. As is typical for canned beans, our canned edamame beans also have a rather soft consistency. Therefore, depending on your preferences, they are better suited for further processing than as a snack. The problem with many canned food producers is that rehydrated vegetables are used in detriment of fresh product. Dried peas, beans and the like are soaked in water. We don't need to do that, since our edamame are grown in Italy and directly processed on site. You get a tin of pure freshness!
Note: The liquid contained in the can may be thick to jelly-like. No need to worry, this is typical for soya beans and happens naturally. Small white spots are also absolutely normal, as these are starch grains contained in the beans. Therefore, please wash your edamame beans thoroughly before further processing.

Production
Bis zur Ernte unserer Edamame vergehen etwa 2–3 Monate, so lange dürfen unsere Bio-Bohnen entspannt auf den italienischen Feldern grünen und heranwachsen. Aber nicht zu lange, denn schließlich wollen wir die Bohnen im unreifen Zustand ernten! Sobald die Erntezeit gekommen ist, trennt unsere Erntemaschine die Edamame von der Schale, sodass wir uns eine ganze Menge Arbeit sparen.
So sehen unsere Edamame ohne Schale aus, wenn sie im nahegelegenen Weiterverarbeitungs-Werk ankommen. Frischer geht kaum, denn wir bauen unsere Edamame-Bohnen nur auf Feldern in einem Umkreis von maximal 40 km vom Werk an. Nix mit tiefgefrorenen Edamame, wir wollen unsere Bohnen so frisch wie möglich konservieren!
In einem ersten Schritt werden die Bohnen gereinigt und Fremdkörper sowie überschüssige Pflanzenteile herausselektiert. Dann übernehmen optische und manuelle Sortierer, welche das gereinigte Produkt erneut überprüfen. Vielversprechend sieht das Meer aus grünen Kugeln auf jeden Fall jetzt schon aus, oder?
Und schon befinden wir uns auf der Zielgeraden: Im letzten Schritt werden die Bohnen in KoRo-gebrandete Dosen abgefüllt und kommen in den Autoklaven. Auto-was? Achtung, Klugscheißer:innen-Wissen: Ein Autoklav funktioniert ungefähr wie ein Schnellkochtopf und ist dazu da, die Dose und ihren grünen Inhalt mithilfe von Dampfdruck zu sterilisieren – absolut unbedenklich und sorgt für die lange Haltbarkeit der Bohnen. Dann geht es für die Konservenlieferung auf direktem Weg nach Berlin, wo sie unser Lager erreicht und nach dem Edamame kaufen, in Deinem Warenkorb landet!
