Banana bread knows slowly really everyone:r, but have you ever tasted it with ginger pieces?
3 | overripe bananas |
100 | Brown almond paste |
1 Tsp. | Cinnamon, ground |
1 Tsp. | Cardamom, ground |
2 tbsp. | Flaxseed meal |
1 Tsp. | Vanilla extract |
125 | (vegan) yogurt or almond drink |
70 | Coconut flour |
1 Pinch | Salt |
3 tbsp. | Water |
60 | dried ginger (best without sugar) |
1 Tsp. | Baking powder |
90 | Almond flour |

Preheat the oven to 180 °C and line a loaf pan with baking paper.

Mix flaxseed meal and water to make a "flaxseed egg" and let stand briefly.

Whisk the bananas in a bowl together with vanilla extract, almond paste and the "flax egg" until homogeneous.

Mix almond flour, coconut flour, baking powder and spices and add to wet ingredients.

Mix all ingredients into a homogeneous dough.

Finally, fold in the dried ginger pieces. If necessary, cut them into small pieces beforehand.

Pour the dough into the loaf pan and bake in the oven for 40-45 minutes.
