Johannisbeeren schätzen das gemäßigte Klima in unseren Nachbarländern und hierzulande. Kein Wunder, dass in Europa über 95 % des weltweiten Johannisbeeren-Ertrages geerntet wird. Dabei zählen Polen, Ungarn und Litauen zu den größten Anbaugebieten, aus denen wir auch unsere Beeren beziehen.

Die Sträucher der Johannisbeeren wachsen schon kurz nach Aussaat in die Höhe. Anfang April bekommen die Gewächse dann grüne Blüten, die traubenförmig an den Zweigen hängen.

Die Sträucher erreichen im ausgewachsenen Zustand Höhen von bis zu 1,5 Metern. Mit ihren teils dickeren Ästen und wildwuchernden Blättern wirken einige Sträucher so schon fast wie Johannisbeeren-Bäume.

In den Sommermonaten ist Erntesaison für die Johannisbeeren angesagt. Dabei sind die schwarzen Früchte meist etwas später reif als ihre roten Verwandten und erreichen den optimalen Reifegrad erst im August. Je länger die Johannisbeeren am Strauch hängen, desto süßer schmecken sie.

When stored in a cool, dry place, your bulk pack of currants will keep for 1.5 years. By the way, our Ball Mason Jars are perfect for storing freeze-dried berries. You may first think of currants as black or red little berries growing on rampant bushes. In fact, currants are common in three colors: Namely, one color variety of red currants comes in white. In addition, there are other varieties of pink and golden yellow currants, but you rarely see them. Regardless of their color, the currants are similar in taste and are characterized by their sour aroma. However, red currants are said to have a slightly sweeter taste and white currants a wine-like aroma.
In freeze-drying, the principle of sublimation removes almost all the water from the food. In this process, the fruit is deep-frozen and placed in a vacuum chamber. The vacuum created there causes the water to change directly from ice to steam. This gives the fruit its crunchy texture, an even more aromatic taste and a long shelf life. The vitamin-preserving process preserves the nutrients.

I make my own jam, always fresh. From frozen strawberries and raspberries. Add a handful of freeze-dried blackcurrants and the jam gels better (always use 1+1 gelling sugar because it contains no preservatives) and has a stronger taste and color.
