Vegan kumpir with "bacon"

The luxury vegan baked potato: kumpir with vegan bacon, a creamy filling and pesto on top! Taste it now!

1 Pck. Vegan "bacon"
3 Units Floury cooking potato
3 tbsp. Vegan butter
3 tbsp. KoRo vegan pesto verde
3 tbsp. Vegan sour cream
3 tbsp. Yeast flakes
1 heaped tbs. Chives, finely chopped
2 Pinch Salt and pepper
2 Units Essiggurken, gewürfelt
  • Step 1/10

    Prepare the bacon according to the package instructions.

  • Step 2/10

    Wash the potatoes thoroughly and prick them several times with a fork. Place them on a baking tray and bake at 200°C (top/bottom heat) for about 60-70 minutes until they are soft.

  • Step 3/10

    Remove the baked potatoes from the oven and let them cool slightly.

  • Step 4/10

    Make a lengthwise cut in the potatoes and carefully scrape out the inside with a spoon. Leave the bottom edge so that the potato remains stable.

    Put the scooped-out potato inside in a bowl.

  • Step 6/10

    Stir in vegan butter and yeast flakes until creamy. Season with salt and pepper to taste.

  • Step 7/10

    Put the potato mixture back into the hollowed-out potatoes.

  • Step 8/10

    Garnish the filled potatoes with the bacon bits, gherkins and chives.

  • Step 9/10

    Top each potato with a dollop of pesto and a spoonful of vegan sour cream.

  • Step 10/10

    Add a sprinkling of pepper and more chives if you like.
