A change from red or yellow curry: a simple and delicious vegetable curry with zucchini, broccoli and spinach that is quick to prepare.
1 Tsp. | Thai green curry paste |
1 Stick | Spring onion |
200 | Frozen spinach |
200 ml | Coconutmilch |
1 tbsp. | Oil (coconut or olive) |
0 as necessary | roasted peanuts |
300 | Broccoli |
0 as necessary | Salt and pepper |
300 ml | Vegetable broth |
200 | Zucchini |

Step 1/6
Cut zucchini and broccoli into rough pieces and spring onion into fine rings.

Heat oil. Sauté zucchini, broccoli and spinach.

Stir in curry paste, add water and coconut milk and simmer for 8-10 min.

Just before the end of the cooking time, add half of the spring onion.

Season to taste with salt and pepper.

Best served with rice and decorated with the remaining green onion and peanuts.
