We harvest the fruits in their country of origin, exactly when they have reached optimal ripeness. They are then preserved using the elaborate freeze-drying process.
Gentle preservation process
The production of freeze-dried fruits is a little more complicated than other drying processes, but it is definitely worth it.
Our fruits are harvested ripe and frozen shortly afterwards. They are then dried using a vacuum process in which the liquid is extracted. The whole process is called sublimation – the water molecules do not become liquid again, but turn into vapour. This is what makes freeze-dried fruit last so long and also preserves the colour and aroma of the fruit. For example, our freeze-dried cranberries are incredibly aromatic.
